OUR INGREDIENTS:
FRESH, LOCAL and LUXURY IMPORTS


We strive to use as many local, small farm - produced ingredients as we can.
Our eggs are generally sourced from happy free-range chicken, fresh milled flour and dairy farms in lieu Walmart shelves
- so whenever we can, we supply our ingredients from selected local farms (pending availability).
 
Our handpicked spices and flavorings come from the countries where they are indigenous, as they are more flavorful due to the soil chemical composition.  We procure our spices and flavorings only from the best international manufacturers.

Our finished products contain up to 8 (eight) times less sugar than the store-bought cakes.


OUR FROSTINGS:
PROPRIETARY RECIPES


We use an in-house developed frosting recipe, protected under the Trade Secret Act. We use only the best butter available on the market - no shortening or artificial stabilizers. We use the minimum amount of sugar allowed by FDA to be used in cake frostings. Our frostings have a complex profile, consistency and depth of flavor, and have an airy and delicate texture even days after the cake has been assembled.


OUR BATTERS:
WE KEEP IT SIMPLE - AND IT WORKS!

We offer European Style Batters and American Style Batters.

EUROPEAN STYLE BATTER
(a.k.a. GENOISE SPONGE)


European Style Batters do not contain leavening agents (baking soda, baking powder, baking ammonia, etc.)
These leavening agents are responsible for inflammation, bloating (acute and chronic), and joint pain.

European Style Batters take longer to prepare and bake - they use a traditional MANUAL technique of incorporating the dry ingredients into the the batter (cannot be done with a mixer) and make the batter raise naturally due to the amount of air it contains. This technique cannot be done with a machine, it is a skill that is learned and passed on in traditional bakeries.

European Style Batters ALWAYS contain only 5 natural ingredients:
- flour
- sugar (LIMITED)
- eggs
- oil
- flavor - most of the times, natural

European Style Batters have a traditional cake texture
(less fluffy, smaller naturally produced air bubbles that rise in time, more bite and structural consistency.)

European Style Batters have a tight crumb and cut clean.

 

AMERICAN STYLE BATTER


American Style Batters contain leavening agents (baking soda, baking powder, baking ammonia, etc.)

American Style Batters are quick and highly industrialized - obtained by mixing the ingredients with a mixer.

American Style Batters contain at least 8 ingredients, out of which at least 3 processed ingredients:
- flour
- sugar
- eggs
- butter / margarine / oil
- milk /and or cream and or buttermilk
- leavening - at least TWO of the following: baking soda, sodium aluminum phosphate, monocalcium phosphate
- natural and or artificial flavors

However, many American Classic Batters call for cornstarch, cake flour (with additional leavening agents), corn syrup or high fructose corn syrup.

American Style Batters have a modern cake texture
(fluffy and puffy, large artificially produced air bubbles in the layers, minimal structural resistance and structural inconsistency).

American Style Batters have a diffused crumb and cut crumbly.

For our family we only serve European Style Batters because we absolutely believe they are superior and with less side-effects on our health, as part of a healthy-lifestyle food choice. However, we believe in freedom of informed choices, and without being judgmental, and being fully aware that the European Style Batters are less popular in the United States, we do offer the American Batter choice for the clients who prefer a crumbly cake (depending on the cake design; some 3D shapes do not allow for crumbly textures.)  

Regardless what your style is, we guarantee to produce decadent, luxurious cakes. Our cake layers are velvety, evenly baked, and infused with flavor because we carefully handpick every single ingredient that goes in our cakes.

Our cakes are always baked as close as possible to the pick-up date, depending on the design of the cake. We never freeze any of our products or ingredients for long term storage. (Freezing affects the overall nutritional quality of food as the water contained in the cells expands and breaks down the nutrient’s chemical composition - and the flavor together with it!)


CUSTOM FONDANT FIGURINES AND FLOWERS
DESIGNED AND PRODUCED TO ORDER


Our lovely fondant and modelling chocolate figurines and flowers are made from scratch.
Our fondant is a high quality marshmallow-based product and our modelling chocolate is made with high quality chocolate.
Our fondant does not taste like rubber, but it has a delicious chocolatey or marshmallowey taste. The figurines are hand-made to order, which is why when you place an order with us, you can be confident that the figurines that go on your cake are not old, stale, and packed with stabilizers for a prolonged shelf life. Depending on the design of the cake, we might use also use an in-house made blend of fondant, modelling chocolate and sugar paste.
